Chef Moo’s wok special. Sweet, sticky and savoury.
Hand-cut beef jerky · Northern NSW
Grass-fed Northern NSW beef, hand-cut, marinated overnight and slow-dried. Dreamed up at a kitchen table at Casuarina Beach.
Moo & Chew began with a pencil case and a big idea. Three flavours were tested, the packets were drawn by hand, and the business plan was written out step by step, starting with "get the parents involved".
Now we're making it properly: beef and ingredients from the Northern Rivers wherever we can get them, measured marinades, and drying that's checked for food safety, not guessed.
The original notebook drawings.
Grass-fed beef from happy cows, sourced right here in Northern NSW.
Cut thin across the grain and soaked overnight in the notebook marinades.
Heated to 71 °C inside before drying finishes, then sealed fresh.
Each one started as a drawing in a school notebook. Here they are, all grown up. The recipes are still the notebook ones.
